The Mock Turtle and the Gryphon dance to the Lobster Quadrille, while Alice recites (rather incorrectly) "'Tis the Voice of the Lobster". The Mock Turtle sings them "Beautiful Soup" during which the Gryphon drags Alice away for an impending trial.

Boris Kosak is a composer of modern classical music. Graduated with honors in composition and musicology at the Kharkiv Institute of the Arts, he further studied composition and electronic composition at the Kölner Musikhochschule in Germany. Among his wide interest in different music genre and style includes Indian raga, the Russian liturgy, the Cuban rumba and salsa, hip-hop and Brazilian samba. He also played keyboard in a Brazilian samba band, wrote music for radio plays, “light” orchestra and meditation music. His music rooted in Scriabin, Stravinsky, Shostakovich, Lutoslawski, Schnittke, Kancheli and Höller.
Already during his studies, Boris Kosak showed a special interest in historical music like polyphony from Pérotin and genres, especially concerto, concerto grosso, dance suite and musique de table.
Reviving these genres, Boris Kosak modernizes them through the choice of extremely short duration of pieces and setting them to just one minute: 25 "Amuse-bouches" for piano and 25 "Petit-fours" for violin and piano, in which culinary and musical motifs are mixed together, 36 "Momenti intimi" for violoncello and piano, and 25 "Bagatelles essentialles" for viola and piano, dedicated to scents and essences.
Apart from "Amuse-bouches" and "Petit-fours", the culinary becomes part of the program concept in "King Arthur's Table Music", "A little nosh music", "Straccia-cello" and "Hors d'oeuvre d'un faune" (from "Suite royale").
